    Sautéed Spicy King Oyster Mushroom

    A delicious one-pan sautéed king oyster mushrooms is packed with umami and can be ready in no time.

    When it comes to mushrooms, king oyster mushrooms come quite high on the list, probably just behind enoki mushrooms. Enoki mushrooms are a staple in Asian cuisine, especially in broths or even grilled on a stick. These stringy and chewy mushrooms have become hard to find due to supply issues, thus making room for king oyster mushrooms to top the list.

    These are hardy mushrooms that come with thick, large stems. Slice these mushrooms into discs and you have vegan scallops (which you can make with my Miso Soy King Oyster Mushroom (Vegan Scallops recipe). Slice them thinly lengthwise and you have the perfect shape for a quick and easy sauté.

    4. In a small bowl, combine Chinese chili bean sauce, soy sauce, oyster sauce, rice vinegar, and sugar. Whisk the ingredients together until well blended.
    5. Pour the sauce mixture over the mushrooms in the skillet. Stir-fry for an additional 2-3 minutes, allowing the flavors to meld together.
    6. Remove the skillet from heat and garnish the dish with freshly chopped scallions.
